Instant Pot Jalapeno Mac & Cheese

I have a house full of boys who love anything and everything spicy!

Not surprisingly they love jalapeño poppers with the spicy kick and the cream cheese goodness!

This jalapeño popper mac and cheese is perfect for them – reminiscent of those jalapeno poppers they love so much!

Instant Pot Jalapeno popper mac and cheese

Ingredients:

1 lb elbow macaroni
4 cups water
3 tbsp butter
2 tbsp red pepper flakes
1 cup evaporated milk
8 oz shredded italian cheese
8 oz colby jack cheese, cut into cubes
8 oz chopped bacon
1/4 C chopped jalapeno’s

Directions:

To start you are going to add to the instant pot the macaroni, water, butter, and cajun seasoning.

After adding this to the instant, stir the ingredients so they are all combined.

Next, you’ll want to close the lid and then seal the valve on your Instant Pot.  Turn the Instant Pot to high pressure and cook it for 6 minutes in manual mode.

After the 6 minutes, do a quick release and turn the Instant Pot to warm mode.

Now it’s time to add in the milk as well as the italian cheese and the colby jack cheese.

Cheeses added to the mac & cheese

Stir this all together until everything is melted and creamy.

Now, add in the jalapenos and chopped up bacon and stir it in.
